Lakeside Recipes
For those of you that have already stayed at Lakeside, then you will know that there is no better way to start the day than with Chef's Eggs Lakeside, served for breakfast in the Lakeview Restaurant, overlooking Lake Windermere.
Eggs Lakeside
Free range poached eggs and honey baked ham, served on a toasted English muffin, smothered with cheese sauce.
Ingredients
| Amount | Ingredient |

| 1 | English breakfast muffin split in two and lightly toasted. |
| 50g | thin slices of good ham |
| 2 | free range eggs fresh |
| 100ml | milk |
| 10g | butter |
| 10g | plain flour |
| 30g | grated Lancashire cheese |
Method
- First make your cheese sauce by bringing the milk to the boil.
- Soften the butter and mix into the flour to form a paste.
- Whisk this into the milk and cook out slowly until thick.
- Add the cheese and bring to the boil.
- Add a little salt and pepper, pass through a sieve and keep to one side.
- To poach the eggs, bring a pint of water to the boil in a small pan with 50 ml white vinegar in it. Gently drop the eggs into water and simmer for 4-5 minutes.
- Toast the muffins, lay on the ham add the poached eggs drained on a towel, drizzle over a little of the cheese sauce and serve with a sprig of parsley.
