Cartmel Valley Venison Loin with Lady Lancaster apple, pumpkin oil and pumpkin gnocchi


Venison is at its prime at the moment, the stags are full of testosterone and at their peak fitness ready for rutting season to begin in mid-October.

I source venison locally through our friends at Cartmel Valley Game. Located only three miles away, Cartmel Valley Game is nestled in the picturesque historical Cartmel Valley. They supply locally sourced high quality game and home smoked produce.

The venison we use is the Red Deer, to ensure it is at the perfect cooking temperature we cook it in a water bath at 52 degrees. To accompany this we serve pumpkin gnocchi, lady Lancaster apples from the hotel gardens, venison shin and pumpkin oil. The combination of autumn vegetables is the perfect host for the venison giving it that look and flavour - as if you have been out on the hunt.
