Spiced Apple & Pecan Cake with ginger beer sorbet, blackberries and custard mousse

Our Spiced Apple and Pecan Cake came about in an unusual way, one day, early evening I went for a brief stroll around the hotel grounds admiring the flourishing apple trees. Later, at home I debated how we could use such beautiful apples within the menu whilst enjoying a ginger beer. Then it clicked! We could put the two and two together.

Our Spiced Apple and Pecan Cake is a fascinating dish, allowing you the opportunity to explore several different flavour experiences - from the soft cake to the ice cold ginger beer sorbet, then to the intense combination of blackberry and custard mousse. It gives you a feel that Winter is on its way but not quite here.
